Due to its mineral character and lively acidity, Soalheiro Granit pairs particularly well with Mediterranean cuisine, fish, white meats, and delicate Asian dishes.

Bright lemon-yellow color, elegant aroma marked by mineral notes. Dry and persistent taste, revealing the more mineral side of the Alvarinho grape variety. There is a sensation of salinity on the palate that reflects the impact of granite soils on Alvarinho.

Granit is made with Alvarinho grapes from a specific selection of small vineyards planted in granitic soil, currently at an altitude of around 400 meters in the Monção and Melgaço sub-region. The higher the vineyards, the more the fruitier side of Alvarinho gives way to notes of acidity and minerality. The plots are chosen due to the minerality and lower fertility of the soil, leading the roots of the Alvarinho vines to sink deeper into the mountainside to find nutrients.

The grapes are harvested by hand. After pressing, before fermentation, the must is clarified. Fermentation takes place in stainless steel at a higher temperature than usual for white wines (22°C), ensuring that the fruity nature of Alvarinho does not mask the delicate minerality we seek in this wine. Bâtonnage and aging on the fine lees improve the wine's structure before bottling.
