Ageing on its fine lees and a marked acidity make Terramatter a bold wine that calls for food. We suggest enjoying it with oily fish, boiled shellfish, smoked meats, lamb, turkey or roasted vegetables. It pairs particularly well with dishes featuring cream or mushroom sauces, and its flavour and texture make it a lovely match for Asian cuisine.

Soalheiro Terramatter has an intense golden colour. As an unfiltered wine, it appears hazy, though it becomes clear once decanted. On the palate it is complex, with vibrant vegetal notes and a silky, smooth texture. Gently mixing the fine lees back into the wine gives it even greater body.

Alvarinho grapes grow in a unique microclimate. The Monção e Melgaço region, at the northernmost tip of Portugal, is sheltered by a mountain range that creates the perfect balance of rainfall, temperature and sunshine for the Alvarinho grapes to ripen to perfection. Soalheiro Terramatter is made from the vineyards of Quinta de Soalheiro, which are farmed organically using practices that encourage biodiversity and protect the vineyard ecosystem, thereby promoting environmental sustainability.

After being harvested by hand, the Alvarinho grapes undergo three distinct winemaking processes. One portion is fermented in stainless steel tanks. Another undergoes both alcoholic and malolactic fermentation in traditional chestnut barrels, typical of the Minho region. The third portion is fermented in concrete eggs, where natural bâtonnage then takes place. The final blend brings together the wines from each of these three portions to create Soalheiro Terramatter, which is then bottled unfiltered.
